A Lifestyle Reboot

So here is the thing. So life is crazy different then I ever would have expected. I have two little people that call me mommy. I never in a million years would have guessed that to be my reality! So a few things about that. The Youngest seems to have some digestive issues which is a bummer because the poor guy is so gassy and uncomfortable at night time. The Oldest really seems to love getting in to everything. It can be quite the handful. So to help keep the Oldest, who happens to be 2 and on track to being very independent, on track with the day to get her to sleep better I made a toddler day chart! It has all her activities on there with pictures so she can recognize what each thing is all by herself!

Work out number one in the books for my road to recovering my body! I do not have to long of a journey I just have to stay on track!    I am joining a group with Christi and Katie ! It is a challenge group. 30 days 5$ each biggest looser wins the pot! So far the pot is 110$!  So you cannot beat that! You can do what ever work out you want and work out plan. I chose to reboot with a strict vegan diet, the main focus is to get my body working properly and my nutrition is right on track! I chose to do the Slim in 6 work out plan on my beach body on demand. it says to do 3-4 work outs a week and each two week block has its own work out they get a bit harder as you go!  I did my first one and it was hard to keep up and get my body in to the right rhythm, this is way I chose to start the work outs a week early so  I can get my body ready for the work outs! Only one that can do it is me! I am going to do an official weigh in!!! I am excited to see the difference!

I started this topic a while ago.  So with new life changes comes an outcome I was not expecting!

We Fight it with meal preped plants that are healthy giving use energy and making our health improve!
In the sprit of helping my mother and wanting to kick up my goals I am preparing meals a head also! If I expect her to be doing it then I need to!
So  in a week I am down a total of 2.5 inches. And 5lbs! I have been doing a workout everyday and trying to drink more water. It can be hard!

My First Tervis sippy cup.

My toddler and I received the Tervis sippy cup in the mail to try out from Influenster.  When we took the Tervis cup out of the box for the first time we were excited because the design on the cup is my little ones nick name Monkeys!  The cup is clear but insulated to keep cold things cold! I must say I really liked this for the times when my little one drinks her milk slowly or is on her second cup. What  I did not like is that you really have to suck hard to get the liquid out of the cup, this is great for keeping the liquid from spilling out of the cup but she kept getting frustrated when she would try to drink out of the cup.  We still use this cup just with out the no spill guard.  Over all I think that we would be likely to recommend this cup with the little note that it takes some practice and some hard suction.

Today just feels like it went on forever. I can also say that today has a different feel to it. I feel as though I may actually be at a cross roads in my life. I have many thoughts that just seem to be different.  I am really ready to start my yoga and put my self back together!   I can walk so maybe that. There are a few core things that are safe and help that I feel ready to start.

+ Sometimes I wonder what I should be doing to be there for you better. I just feel like it would be better for you to talk and deal with the frustration that you feel , instead of sitting down and acting like an asshole. I refuse to be grumbled at like that! Cold shoulder you get for that.

I feel offended that someone would tell me that the reason they want you to cover yourself while breastfeeding your baby because 'breastfeeding is not the issue, the issue is that you do not want to explain to your children that I am feeding my baby special milk my body makes for him because you cannot do it yourself! !?' Are you effing kidding me you selfish entitled brat!  I am done communicating with you!   Sad that my toddler understands more what I am doing with my son then you do.

Been in cloth a full day now and little Edvard is doing well! His bum is healing color still seems about the same. Starting to wake up ever  1.5-2.5 hours! Pumping will start soon!

Chickpea salad on toast!

Step one.

1 bagchickpea
LG stoneware bowl and cover
Boiling water
Sea salt

Empty beans in to stoneware bowl. Add 2 Tbsp Salt. Boil 4 cups water. Add Boiling water (2 tea kettles worth or keep I inch higher water level then beans). Soak for 2 hours.

Step 2.
Pressure cooker
Soaked beans
Liquid smoke
Dehydrated garlic
Salt
Cold water

Add rinsed Soaked beans from stepone. Add seasoning to taste. Add water so that it is just over beans. Turn burner to high, once rocker starts dancing turn down to 4, cook 5-7 min. Turn off burner leave pot stand on burner to cool.

Step 3.
Potato masher
Cooked beans
Mayo
Chopped celery
Chopped carrots
Chopped bell pepper
Pepper
Salt
Garlic powder
Chopped onion

Use baby chopper to chop onions and carrots together. Chopped celery and peppers in to small pieces, mash the beans so it is chunky mashed. Add remaining ingredients to taste I like more veggies for a good wrap base or sandwich spread. Chill before serving.

Vegan fried rice

Made with  tempth loaf.

1/3 cup each tempth loaf ( cut in to bite sized cubes.
1/4)3 cup mixed veggies from dinner night before
1/3cup cooked rice
1 tsp olive oil

Add all to seasoned frying pan. Saute on med low heat until hot.

It is feeling like a creative kind of day!!

The baby is having a nap! So it is time to create some yummy things and write down and share some of the ones I have already created. 

I have been working hard to remember to snap some photos along the way. Today I am going to be sharing a black bean brownie recipe that I just love. I have added a few things to make it more my own and make it on a larger scale then the original, but these are soo yummy that my father(who will not try anything new) loves them!  I will also be sharing a recipe for a bean patty that I make. it can be turned in to a patty or spread on toast with cheese or what ever you like really.  For fun I will post these all as their own posts so that they can be easily found later!


In life news, I am still thinking and looking for that thing I am the best at!   I am a great baker and creative with random ingredients so maybe that can be it.  While talking to my husband I mentioned I have been thinking of writing my own cook book so maybe I can do that!  I am just so tired of dealing with stupid and annoying people. 

To day is a great day! Love is truely beaming from every inch of my being today!

New recipe

Today I decided to put my new pressure cooker to work and cooked ten cups of mixed beans I have had around the pantry a while, it is a mixture of many different beans usually the last bit of a bag when I am making a recipe. Half of them I made in to a burger which was much better then I thought it was going to be! I will surely be making them soon! I will post the recipe later along with a few of my other favorites!  I took the other half and made brownies, they are more dense and fudge like but man are they super yummy!

I have been more on the hunt lately of things I can make with some type of bean in them, I have a big stock pile but I also have a pressure cooker which makes it so I can cook them in just 20 min instead of 2 hrs!  I have found so many different recipes I cannot wait to try, best part is that my husband and daughter will eat pretty much anything I put in front of them!

My husband is also about to start running again which has motivated me to get back to as close to super vegan as I can get. He has said he is wiling to try the vegan athlete diet and lifestyle! I am so excited. I want to go back to as super vegan diet as I can because I just love to eat and I want to be able to eat what ever I want with out having to pay attention to the calories!

Let the journey began! Time to loose this baby weight and not feel so trash bagging tired all the time!

An introductory letter!

Hello there! I am starting this blog to share my opinions with whom ever would like to listen or in this case read them.

In this blog I plan to share a snip-it of what it is like to be me, product reviews, my favorite recipes.


From time to time I may even through in a story or to of what it is like to be me. I my self have found help from others when reading about their lives!

Now how about a little about me and my amazing family!   I am 31 years old. I am married to an amazing man who works in a field that he is unappreciated for but he loves it and is good at it! We have a 1 year old daughter named Olivia-Pearl(Op) who is crazy smart, funny, happy, and in love with life!  We are mostly Vegetarian, I still cook salmon from time to time or when we go out hubby will eat what ever his heart desires! We were recently married ,October 2014, and it was my dream day! The locations were perfect, our ceremony and reception were held in different places!  The food was amazing! The best part however was marring the person of my dreams!
